That's just how Apple works. They regularly put on these huge release parties which are guaranteed to get them major press exposure. If they only announced stuff which was already known, well, not so major press exposure anymore. Besides, if they had to pull a known feature, everyone would be up in arms about Apple "stealing" features from them (see: issue with announced G4 PPC machines). This, btw, is *exactly* what is constantly happening to Microsoft: They announce huge feature list and then release products with 10% of the features on them. Instant bad press. It just puts a bad taste in peoples' mouths. On the other hand, there are supposed to be a few new "secret" features, so maybe they don't want any of those to accidently (or otherwise) leak out.
