I'm about to purchase an Apple TV and so found this page through google to help out on converting tips. The results of various testing with ffmpegX were very poor, multiple errors and slower than anything. Quicktime Pro faired a little better but the winner by far is VisualHub. It has the simplest interface. Apple TV, iPod all present for you to simply tick, a quality level glider and plus super quick. It even has the option of importing the videos into iTunes when its done. It's not free but well worth it. Strongly recommended and without it I wouldn't buy an Apple TV.
